7 Recipe: Lemon Squares 
1 cup all-purpose flour
1/2 cup margarine or butter, softened   NOT MELTED!!
1/4 cup powdered sugar
2 eggs
1 cup white (granulated) sugar
1/2 teaspoon (tsp.) baking powder
1/4 teaspoon (tsp.) salt
2 teaspoons (tsp.) grated lemon peel (optional)
2 tablespoons lemon juice
Heat oven to 350 Degrees F. Mix flour, margarine and powdered sugar. Press in ungreased square pan, 8x8x2 or 9x9x2 inches, building up 1/2-inch edges. (This is going to take some fancy fingering and may take awhile. But after working the dough in the pan for a long while, you should achieve a very thin crust that fits. Remember, this is a thin crust, not cookie dough.)  Bake 20 minutes. Beat remaining ingredients until light and fluffy, about 3 minutes. Pour over hot crust. Bake until no indentation remains when touched lightly in center. (The recipie says about 25 min.s but some ovens, like mine may only take 20 minutes. Cool; cut into squares for eating!!



8 Recipe: No Baked Cookies

2 cups white sugar
1/2 cup milk
1 cube of margarine
1/4 cup cocoa
3 cups of oats
1/2 cup of peanut butter (creamy or crunchy)
1 teaspoon (tsp.) vanilla
Mix top four ingredients together in a medium/large sauce pan on medium to high heat. Blend untill mixture boils. (It looks like how you blow bubbles in milk. So watch it incase it overflows.) Boil for one minute. Take off heat and mix in other ingredients. (Do this fast because it hardens quickly.) Then, drop on to waxed paper or foil to make cookie sized blobs. Let them cool and harden. Then ENJOY!! :)


9 Recipe: Russian Teacakes
1 cup margarine or butter, softened     NOT MELTED
1/2 cup powdered sugar
1 teaspoon (tsp) vanilla
2 1/4 cups all-purpose flour
1/4 teaspoon (tsp) salt
3/4 cup finely chopped nuts
      powdered sugar extras
Heat oven to 400 degrees F. Mix margarine, 1/2 cup powdered sugar and the vanilla. Mix in flour, salt and nuts until dough holds together.  (Now, my family doesn't like nuts so we replace them with a small amout of vegetable oil. This replaces the oil from the nuts that holds the cookie together. Just in case you don't like nuts either).
Shape into small balls. Place about 1 inch apart on ungreased cookie sheet. bake until set but not brown, 10 to 12 minutes.
Roll in powdered sugar while warm and then let them cool afterward. Roll in powdered sugar again and ENJOY!    Makes about 4 dozen cookies if they are really small.
